Collard Greens


     I work in a place where I am the only person of color...most of the time. In the nearly 13 years I have been here,  there have been about 3 of us at 1 time and that was only about 3 months. Eventually, 1 quit, 1 got fired and I am still here.  I had a collard greens cooking fiasco before Thanksgiving. Everybody in my dept. knew about it. They DON'T know about greens... but they heard all about my stress at not having enough greens for my oldest son J when he arrived home for Thanksgiving. The even knew the real reason we did not have enough was because I put my damn foot in that first pot and could not stop eating them ...therefore significantly decreasing the amount needed for Thanksgiving. They have no idea what greens are!?! I don't get that..but whatever. Nobody really asked questions, a couple mentioned they have never had them. (DUH.. I kinda figured that out since NO ONE knew what they were) So I finally said I was going to bring them some, so they could acquaint themselves.

     Sooooo, yesterday I bought some greens to work for lunch for myself. These were not the best representation of greens. They were the last of the greens. The ones that have been reheated more than a few times so they were a little mushy if you ask me. People wanted to taste the greens. What was I going to do? I did not want their first time to be mushy ass greens,  I wanted to give them a fresh pot of greens... but noooooooo, they want these. So...6 northern white people tried my greens yesterday and to my utter amazement...6 northern white people now love collard greens!  Northern white people!  Southern white people know about greens , but in my limited experience I don't know any northern white people that do... until now.
   
   There was a request that at the next potluck.. I bring a pot of greens.  Also a request that I make a pot of greens for my department.   

You may not be shocked ....but I am.

Gotta go ... on my way to Weight Watchers for the big weigh in.
